Fast Protein Fix

Right before your period it’s important to stock up on extra protein and iron. It’s also a time when you don’t want to go carb-crazy as it just adds to feeling bloated. A fresh meal that truly satisfies what your body needs includes good fats and protein to sustain your energy. Red kidney beans have lots of good fiber and essential vitamins. Canned salmon and tuna are good alternatives when you need a quick and healthy meal. Add in some green veggies and olive oil and you’ve got a fast, nutritious salad with a protein punch.
Ingredients:
1 can of tuna or salmon packed in water
1 can of red kidney beans
1 large bunch of asparagus (or green beans if you prefer)
Dressing: 2 tbsp olive oil, 1 tbsp lemon juice, 1/8 tsp mustard powder, freshly ground pepper
Steam or blanch the asparagus so they are tender but not limp. Cut into 2 inch pieces.
Drain the tuna or salmon. Drain the beans and rinse.
Mix the beans, fish and asparagus together in a bowl.
Whisk the dressing in a bowl and then toss together with the salad.
Enjoy on its own or on a bed of greens with a hard-boiled egg for a super-protein meal!
