Gift Recipe: Vegan Finger Print Cookies

These cookies make a great holiday gift! One year instead of making holiday cards or buying tons of gifts I bought lots of tins and filled it with these delicious vegan cookies for friends and family. It was a HUGE HIT! No one knew they were vegan or made with natural sweeteners....
1-cup whole-wheat pastry, spelt or oat flour
1- cup rolled oats
1-cup almonds or other nuts
1/2 cup oil (corn, safflower, or canola)
1/4 cup rice syrup
1/2 cup maple syrup
1 tsp. vanilla
1/2 jar all fruit jam
Grind rolled oats and nuts in a blender or food processor.
Add them to flour.
Mix the oil with the sweeteners in a separate bowl and whisk together.
Combine dry and wet ingredients.
Drop batter onto a cookie sheet.
Make a finger print in the middle of each cookie and fill with jam.
Bake at 350 degrees for 10-15 minutes.
NOTE: DON'T OVER COOK. Take cookies out of oven about a minute before you think you should!
